In general, sausage is too salty for cats. The most popular sausage brands contain about 826mg of salt per link. That’s a lot for a cat who normally can only consume between 20 – 40 mg of salt per meal.
Sausage fat content is also quite high at around 35g per link. While a single link will not harm your cat in the long run, it may make them feel a bit sick in the short term. Cats don’t consume nearly that much fat in a can of food at any point.
In addition to concerns with salt and fat content, you have to keep an eye on the preservatives used in most sausages. There are multiple methods companies use to preserve sausages, but the most popular is applying sulfur dioxide to them. This keeps the sausage fresh.
While some of these ingredients are already included in some pet foods; including potassium and sodium; sulfur dioxide can cause certain issues; particularly Thiamine deficiency. With that can come neurological issues. It’s even worse if these foods are fed regularly with those that don’t have any preservatives in them.
The only way to really regulate this is to, of course, limit the amount of sausage you feed to your cat (or don’t feed them any at all).

- Garlic

Italian sausage is packed with tons of spices that give it its rich flavor, but your cat should not be eating all of those spices as part of its regular diet.

A growing kitten can eat cooked sausage, but it does not have enough nutrients for your cat to grow healthy and strong.
